If you only think of salad when it comes to raw food, you should definitely try these raw-delicious cakes and other sweet treats. Fresh, light, and creamy, these match the festive days, allowing you to serve delicious raw vegan sweets straight from the fridge. Unlike ordinary cakes, the raw food variant does not require baking in the oven, but – as the name implies – it can be prepared with raw ingredients.
That does not have to be exclusive! Essentially, these delicious raw vegan sweets support a healthy lifestyle, as they consist entirely of healthy ingredients. Additionally, these raw vegan cakes do not require baking before consumption.
The raw sweets varieties are vegan, so they can do without eggs, milk, and other animal products, which makes cooking in the oven inevitable. Flours and sugar are also usually avoided, with nuts such as almonds or cashews, fresh fruits, and dates for the sweetest of seasons.
Not only is it a true culinary treat, but it’s also incredibly nutritious: nuts contain plenty of healthy fats, protein, filling carbohydrates, and fiber. Rich in minerals, dates have healthy calcium, copper, zinc, potassium, magnesium, and many vitamins – who would have thought cake feasting could be so healthy? Enjoy the healthy raw vegan sweets!

This Raw Pumpkin Pie Cheesecake is a combination of a traditional pumpkin pie + cheesecake (non-dairy). I use a generous amount of creamy cashews as the base, combined with pumpkin puree, to create a rich, dense, and velvety texture that pairs perfectly with the crust made from sweet and chewy dates, shredded coconut, walnuts, almonds, and a hint of coconut oil. Warming spices such as cinnamon, nutmeg, and pumpkin pie spice blend are what take this pie to the next level… that and maybe a bit of my Coconut Whipped Cream. This pumpkin pie cheesecake is technically not 100% raw, as the pumpkin puree is cooked; however, other than that, this recipe requires no cooking.

The stunning no-bake dessert is easy to make, delicious, and sure to impress anyone who tries it. They’ll never know it’s vegan, that’s for sure!
