You can store Celery in the refrigerator’s crisper drawer for up to two weeks. Remove the roots, stalks, and leaves of the Celeriac and wrap the bulb in a damp cloth. It stays fresher the longest if you store it airtight. 

Freeze Celery

You can also freeze Celery. Cut the celery root into small pieces and pack it in an airtight container before placing it in the freezer.

Previous blanching is not necessary.  If the vegetables are frozen raw, they will keep for two months. But blanched, the shelf life is extended to up to twelve months. Airtight packaging is essential.
